Keto Margaritas
We visited the Matagorda Nature Park along the Texas gulf coast. A little bit of fishing, a little bit of kayaking, and a lot of margaritas. I created a keto (low carb) margarita with only three ingredients. Four, if you want to add the salt rim. I opted for no salt, since we were camping, and I wanted to keep the packing as minimal as possible.
On a side note, the park is right on the water. They offer classes and guided tours, plus many amenities. It takes a lot of the headache out of planning. I can’t wait to visit the next park.
The amazing thing about the nature park is that you can either come with your own tent or RV, OR rent one of their airstreams. It comes fully stocked with kitchen supplies (and more). So really, I only had to bring my ingredients.

Ingredients for Keto Margaritas
Tequila
Limes
Swerve granulated sweetener
Optional: salt to rim your glass.
Instructions:
Bring water to boil, then remove from heat.
Pour in a small amount of swerve (or another keto approved sweetener). Use granulated sugar form. Stir until dissolved, then taste. Add more, a little at a time, stirring in between, until it reaches your preferred sweetness.
Squeeze several limes into a bowl or cup. Pour into simple syrup mixture until desired lime taste is reached.
Pour into glasses and add a few splashes of tequila.

I had a lot of fun with Kaylee, hopping the boutiques in Matagorda, then enjoying drinks while lounging outside (sometimes inside as well, to avoid the 100+ degree heat)!
